A ranch hand at the Bar 4 ranch in northeastern New Mexico names Jose Schwartz put this salsa together for a wedding party for his old friend and fellow cowboy, Shorty (pronounced “Chorty”) Chavez. Shorty married a pretty little lady name Liz Murphy from a neighboring ranch who upon tasting Jose’s salsa exclaimed, “Ummm! Tastes kinda smokey, Jose.” From that day on, Jose had a nickname and we had a name for his salsa.

Ingredients: Red chile, chipotle, onion, garlic, red bell pepper, oregano, comino, sugar and salt.
